7 oz mixed vegetables (1 carrot, 1 celery stick, 1 small leek, parsley)

2 T butter

salt, pepper

2 oz butter or shortening

1-2 medium onions, chopped

3-5 garlic cloves, crushed

pinch of ground ginger, caraway

2 T flour

5 cups (2 pts) beef stock

Finely chop soup vegetables, melt butter and saute vegetables until tender. Add seasonings and broth. Bring to a boil. Reduce heat and simmer for about 20 min. Put the soup mixture into a blender and blend until smooth.

Melt the shortening. Saute onion and garlic until translucent. Season with ground ginger. Stir in flour to form a roux. Reheat soup and add flour mixture to soup. Season to taste. Serve hot.
